Chateau Haut-Bailly, located just outside Bordeaux, in the Pessac-Leognan Apellation, home to the most prestigious Graves Great Growths, has stood in the midst of a single-block, 30-hectare vineyard for over four centuries. The constant emphasis on quality is achieved through low yields, careful selection and the use of high-performance equipment: the vineyards are ploughed, maintained without weedkiller, and harvest by hand in the traditional way. Temperature-controlled vats are used to ferment grapes from each plot separately. Three weeks vatting are followed by 16 months ageing in barrels. Batches that do not have the rquired concentration are set aside for the second wine and marketed under the La Parde de Haut-Bailly label. Haut Bailly wines have a subtle, harmonious style, combining finesse and concentration, suppleness and structure and soft tannins with rich aromas- a pure elegance.
